The tendon is slowly simmered for hours in a fragrant blend of soy sauce, spices, ginger, and aged aromatics, allowing every piece to fully absorb the soul of the broth. The result is a glossy, melt-in-your-mouth tenderness that still holds a pleasant chew and full of collagen — a texture loved across generations.

In old Hong Kong, beef tendon was a treasured ingredient often found in noodle shops, dai pai dong. Its irresistible combination of savory aroma and silky texture made it a comfort food for many. Today, we recreate that traditional flavor with the same patience and craftsmanship, preserving the heritage of lo mei (marinated stock) culture.

Ingredients:

beef tendon, sichuan peppercorn, star anise, chenpi, sand ginger, licorice, amomum, clove, nutmeg, cinnamon, cumin, galangal, lemongrass, fructus amomi, chili, water, garlic, ginger, onion, rock sugar, salt, pork bone, chicken bone, dried shrimp (crustaceans), soy sauce (water, soybeans, wheat (gluten), sugar, salt, edible alcohol, yeast extract)

Heating Instruction:

  1. Defrost in a fridge for 12 hours. Place the food in a microwave to heat up to 75°C                                                        (for a optimal quality, reheat 4 times and 2mins interval (total 8mins)
  2. Boil it thoroughly in a pot till 75°C
